This is a recipe that the whole family uses and has used for some time. I've been enjoying it for almost my entire life- a younger me would recommend rubbing this into your hair and flinging it from a high chair, but you may like to settle for just eating it.


  • 9oz self raising flour

  • 9oz sugar

  • 9oz soft margarine

  • 3oz cocoa

  • 5 medium or 4 large eggs

  • 3 tablespoons boiling water

For the chocolate butter icing:

- As a base, mix together 1 part cocoa, 2 parts butter and 3 parts icing sugar. Decide on your own quantities depending on how thick you want the icing to be.


  • Grease and line an 8 to 9 inch cake tin

  • Stir all the ingredients gently together, then beat them (or use an electric mixer) for 2 minutes

  • Put mixture into the tin and bake in the centre of the oven at gas mark 4/ 350°F/ 180°C for about 1 hour until well risen and firm to the touch

  • Leave cake in tin for 5 minutes, then turn on to a wire tray to cool

  • Slice the cake in two and ice the bottom half with icing, then replace the top half and ice the top
