If you enjoyed the Anzac biscuits with the Macadamia nuts, you might like the walnuts in this traditional tea loaf. With the dates in as well, it makes for a fairly healthy choice to go with your tea or coffee.

Ingredients:

225g dates
pinch of bicarbonate of soda
150ml boiling water
75g margarine
75g caster sugar
1 large egg
225g self raising flour
75g walnuts, chopped

Method:

1-Pre heat the oven to 180°C/350°F/Gas Mark 4, and grease and line a 1kg loaf tin.

2-Chop up the dates and add them to a bowl with the bicarbonate of soda and the boiling water.

3-Cream the margarine and sugar in a large bowl and then beat in the egg.

4-Stir in the flour and chopped walnuts and then pour in the dates and water.

5-Scoop the mixture out into the tin and then bake for 45 minutes to 1 hour- check with a skewer.
