Like rich tea and digestive biscuits with tea, coffee enjoys a similar partnership with the more elaborately named amaretti biscuit. Traditionally from Saronno in Lombardy, Italy, legend has it that the biscuit was first conceived by a couple who made them as a gift for a visiting cardinal three centuries ago. The biscuits are small, dome shaped, light, crunchy and typically flavoured with almond. They appear to be a fairly simple thing to make ( depending on the recipe you follow, that is). Why not try out this recipe for yourself:


- 340g ground almonds
- 340g caster sugar
- 4 egg whites
- 30ml amaretto liqueur
- butter, for greasing

- makes approximately 20 biscuits

- Preheat the oven to 170C/325F/Gas 3.
- In a large bowl beat the egg whites until firm.
- Mix the sugar and almonds gently into it.
- Add the amaretto liqueur and fold in gently until you have a smooth paste.
- Place some baking parchment on a baking sheet lightly brushed with butter.
- Using a teaspoon place small heaps of the mixture approximately 2cm apart as they will expand whilst cooking.
- Bake in the oven for approximately 15 minutes until golden brown.
